How to Maintain a metal kitchen knife

Dec 31, 2010 07:32 AM

keep the edge of the blade aligned. With regular use, any metal knife's edge will lose its sharpness cause the cutting edge always takes on a wavy S-shape. It is important frequently to re-align the edge of the blade with a honing steel and oil to keep it's sharpness.

Keep the knife out of dishwasher. The heat may damage wooden handles and the edges may bang against other cutlery or plates.Aside from the fact that is dangerous the blades can become dull when rubbing against one another in the drawer.  You can also use magnetic racks for hanging knives.  Whichever method you choose make sure to keep them out of reach of small children.

Sharpening the kitchen knives on a periodic basis. It will not only extend the life of the blade and also is a safety rule.Other way to sharpen is placing the knife just under the handle of the steel and then with the knife handle touching the bottom of the steel handle.

Use wooden or composite plastic cutting boards only. don't use the glass, ceramic, marble or steel will cause it will wear the edge of the knife.

Finally, keep the knife dry and clean,to keep it from rusting. We prefer to wash knives by hand but most knives made today can be safely put in the dishwasher.  If you prefer dishwashing make sure the knives you select are dishwasher safe.  When placing the knife in the dishwasher lay it flat on the top shelf with the blade tips facing the back of the dishwasher.
